{"id":2191,"date":"2013-07-17T07:49:47","date_gmt":"2013-07-17T07:49:47","guid":{"rendered":"http:\/\/centrodeolivaryaceitelaloma.com\/copiablog\/?p=2191"},"modified":"2014-08-06T16:59:21","modified_gmt":"2014-08-06T16:59:21","slug":"dani-garcia-y-david-olivas-imparten-una-master-class-sobre-aceite-de-oliva-extra-virgen-en-nuestra-aula-de-cocina","status":"publish","type":"post","link":"https:\/\/centrodeolivaryaceite.com\/es\/dani-garcia-y-david-olivas-imparten-una-master-class-sobre-aceite-de-oliva-extra-virgen-en-nuestra-aula-de-cocina\/","title":{"rendered":"Dani Garc\u00eda y David Olivas imparten una Master Class sobre Aceite de Oliva Extra Virgen en nuestra Aula de Cocina"},"content":{"rendered":"<p>Cerca de una veintena de profesionales, tanto de los fogones como del sector productor de aceite de oliva, han participado esta ma\u00f1ana en una &#8216;master class&#8217; ofrecida por el prestigioso cocinero Dani Garc\u00eda (M\u00e1laga, 1975), uno de los grandes chefs a nivel nacional e internacional, que ha servido para inaugurar el aula de cocina de la que dispone el Centro de Interpretaci\u00f3n Olivar y Aceite Comarca de La Loma situado en la Casa de la Tercia de \u00dabeda. El que es considerado como uno de los gur\u00fas de las nuevas tendencias en los fogones, poseedor de varias estrellas Michel\u00edn en el Restaurante Calima de Marbella, ha estado acompa\u00f1ado por el que es su mano derecha y jefe de cocina, el ubetense David Olivas.<\/p>\n<p>La <strong>clase magistral ha tenido como protagonista al aceite de oliva<\/strong>, que ha adquirido diferentes texturas para dar forma a nuevos platos. No en vano, Garc\u00eda siempre ha destacado por su utilizaci\u00f3n innovadora del &#8216;oro l\u00edquido&#8217; con el que logra un resultado de contrastes pues, haciendo uso de las t\u00e9cnicas m\u00e1s novedosas, rescata a la vez sabores tradicionales de la cocina del sur de Espa\u00f1a.<\/p>\n<p>De una forma amena, cercana y participativa, los dos cocineros han mostrado su forma de obtener distintas texturas a base de pasar el aceite por l\u00edquido de nitr\u00f3geno a una temperatura de 196 grados bajo cero. As\u00ed, por ejemplo, han presentado su s\u00e9mola de aceite (llamada as\u00ed por su aspecto) obtenida tras espolvorear un arbequina en el nitr\u00f3geno con la ayuda de un sif\u00f3n y servida con un poco de pan tostado y ajo picados por encima. \u00abEs como una tostada, pero al rev\u00e9s\u00bb, ha explicado Garc\u00eda, destacando que en boca el aceite se derrite y se puede apreciar todo su sabor.<\/p>\n<p>Tambi\u00e9n usando el nitr\u00f3geno, han elaborado sus famosas palomitas de tomate y aceite, una de las recetas m\u00e1s vanguardistas que hace ya unos a\u00f1os colocaron el nombre de Dani Garc\u00eda junto al de los grandes cocineros contempor\u00e1neos. Y han finalizado con un coupage, t\u00e9rmino utilizado en el mundo vitivin\u00edcola para definir la mezcla de diferentes variedades de uva, que en este caso, a la manera de estos dos chefs, ha consistido en la combinaci\u00f3n de dos aceites a trav\u00e9s de la cual a un picual le han aportado los aromas de un arbequina.<\/p>\n<p>La experiencia ha sido muy satisfactoria para todos los participantes, quienes han tomado buena nota de lo que se ha mostrado en estas instalaciones ubetenses, muy bien equipadas para este tipo de actividades de las que en un futuro se espera desarrollar m\u00e1s. Dani Garc\u00eda ha destacado la labor que llevan a cabo lugares como el Centro Olivar y Aceite pues ha dicho que, aunque el aceite espa\u00f1ol es muy conocido y valorado \u00abno podemos permitirnos que, siendo los mayores productores y teniendo la mayor calidad, el mercado internacional lo cope Italia\u00bb.<\/p>\n<p>As\u00ed, ha abogado por aunar esfuerzos para colocar la <strong>compra del aceite de oliva nacional en el lugar que le corresponde,<\/strong> destacando la variedad y calidad del que se produce en Ja\u00e9n. \u00abCon el aceite debe pasar como con el vino y, como m\u00ednimo, a un nivel de andar por casa, deber\u00edamos dominar sus variedades y ciertos conceptos b\u00e1sicos.
